Hydrangea Lunch & Ricotta Cupcake Recipe

I had planned to do a table with some new dishes I picked up when I went on a shopping marathon with The Tablescaper last week.  I left here at 10:30 and got back around that time that night!  We worked in cut and color , lunch and bargained our way through HG, WS/PB Outlet, Pier One, TJMaxx, BB&B  and Kmart. We left no dish unturned!

BUT, some of my hydrangea were hanging over due to a storm the other night, and needed to be cut.

Please join me for lunch on the deck.  There is a little breeze, and we are in the shade.

A wicker basket overflowing with hydrangea is the centerpiece.

Blue tablecloth, lavender mat, green swirl flatware.  All from CTS.

The hydrangea plates are from CTS.

The stemware is from HG.

The last of the lilies in the background.

The ceramic napkin rings are from Villeroy and Boch and the napkins are from Dansk.  They had some stains on them so I bleached them and dyed them lavender. They are a good size, so it was worth a try! They were trimmed in multicolor , but they came out fine.

In my last post I promised the recipe for the Ricotta Cupcakes with blueberry sauce.

Bargains 680

You can see that a buttery crust is pressed into a cupcake pan, then filled with the ricotta mixture.  The blueberry sauce recipe is here

If you try them, I hope you enjoy them.  Dh did.  I really think the sauce makes them!

Cake part:

3/4 unsalted butter

1 c sugar

2 lg eggs lightly beaten

1 1/2 t vanilla

3 1/2 c flour

1 t baking powder

1/2 t salt

freshly grated nutmeg, I use cinnamon

Filling

3 lbs whole milk ricotta

1 C sugar

4 lg eggs beaten lightly

1 3/4  t cinnamon

Preheat oven to 400 .  Cream butter, add sugar  and beat till fluffy.  Beat in eggs, one at a time.

Dough

Sift dry ingredients, add to butter mixture in 4 additions.

Cover loosely and chill.

When it is chilled pinch off walnut sized pieces and roll into 3 in rounds.  ( I flattened them with my hand and  pushed into greased muffin tin)

Now spoon the mixture into the cups and bake for 30 mins.

Let cool in the tins for 15 min.  Remove and cool thoroughly.

Makes about 36.

(I halved the recipe) The  recipe is from 10 yrs ago from a newspaper.

  3. You did a table for me...thank you! I ♥♥♥ everything about it from the tablecloth to the plates, to the napkins, to the stemware, to the flatware. Your hydrangeas are gorgeous...mine not so nice with all this 100° weather. The Limelights are doing okay, though.

  8. Your hydrangeas are gorgeous, Kathleen! My flowers are wilting in this heat but your hydrangeas are gorgeous, as always!

I know you must have had a fun escapade with The Tablescaper. I don't think I could have done a 12-hour marathon so I am duly impressed by your endurance.

Thanks so much for the recipe for the cupcakes. I look forward to trying them!

    Hope you're keeping cool there!

  9. Hi Kathleen! I saw your comment and had to come right over and say hello! Although, your blog seems familiar, probably from when I did a couple of tablescapes and linked up to Susan's linky party. Your garden looks lovely ~ so much better than mine right now. It doesn't help that I'm in full sun and I don't think that rain the other night helped much. Just as a point of location, I am exit 63 off the LIE, so I don't think we are far from each other!

  11. A beautiful tablescape - those hydrangea plates are gorgeous. I enjoyed the tablescape but I also studied the background of each photo of the table to admire your beautiful gardens. I planted those same Muscadet lilies this spring and the blossoms are huge - I hope they overwinter.

  22. Your creativity knows no bounds, our most clever Kathleen! So you dyed the stained napkins in a way that enhances the beauty of the "hungover" hydraneas? And you're serving a real, delicious-looking, color-coordinated dessert? Does your dear hubby realize how fortunate he is??? If not you inform him immediately!!!

    Fondly,

  35. We shopped til we dropped! Had a blast doing it. I didn't let my broken toe stand in the way.

Love the table. You know I bought the same dishes. I think it's so neat how each of us can purchase the exact same items and come up with something completely different. And love both!

    When's our next marathon?

  41. Oh, my dearest Kathleen...what a beautiful table!!! The color is just magnificent!!! I LOVE shades of blue and purple together! Your flowers are really looking good. I didn't plant one single thing this year. The deer came in and snatched everything I planted last year out BY THE ROOT!!! I refuse to spend that kind of money again for them to feed on! How dare them! :-) Enjoy your new purchases!!!

  45. Good to see that the deer left you enough hydrangeas to use in yet another winning tablescape. One of these days I'm going to have to come right on down to Long Island and join in one of your shopping adventures. Then I'd have to add another room on the house to put everything. Hope you are surviving heat. It's very hot in Maine, too.

  57. This is absolutely gorgeous!! Love those colors! Ever hear the (old) song "Lavender Blue." reminds me of it!

I can't seem to get my act together to do more tablescapes. This week I had to deal with my husband's diagnosis of a blood disease (too much iron in blood) I think they can get it under control soon.

  58. i would love to watch you ladies shop together! It must be so much fun! Your hydramgea tablecape is so pretty, Kathleen. I also have purple hydrangeas and they are blooming like crazy but this heat of the past few days have made them limp.

Thanks for this yummy recipe! I'm always looking for new ways to use ricotta.

I'm staying indoors in the AC with all this heat. We did volunteer work this morning at Green-Wood Cemetery--indoors, thankfully!

    Stay cool!

Then, I saw those ricotta cakes and forgot about everything but saving that recipe. YUM.
