A few short months ago we were covered with snow, and now it is HOT! The gkids aren't bothered by the heat, they spend most of the day in the water! This is the Peconic Bay, a beautiful private beach by our home. There were some jelly fish, so we keep the bottle of vinegar on hand. Nothing is perfect!
This is the ocean, we were there last Sunday. A lot rougher, and watch those rip tides. The Bay is a lot calmer!

When I did my Lemon Yellow table, I thought I would carry through with a Lemon chicken for dinner.
I buy the boneless breasts , (cheaper :) ) and slice them thin myself. Pound them thinner, and season.
Dredge in seasoned flour, and brown in a small amount of evoo, or a mixture of butter and margarine. Remove from the pan and keep warm.
Slice some scallions thinly and saute in the same pan. Deglaze the pan with some dry white wine and fresh lemon juice. Add some chicken broth, or use chicken base, Tone's or McCormick, mixed in some water. Grind in some pepper. Simmer.
Return the chicken to the pan, and add some fresh parsley and heat through. The sauce should not be watery, so if it is, thicken it a bit.
Right before serving , swirl some cream or half and half into the pan.
I served it with linguine tossed in olive oil and cooked and seasoned spinach with some freshly grated locatelli cheese.
Some people add capers to their piccata, but I find them too salty.

ReplyDeleteI have an I Pad and haven't had any problems commenting on blogs. Did you uncheck the box that say "stay signed in" when you put in your e-mail and password? That seemed to help the problem we were all having with commenting on blogs a month ago. Do you use 4G service? It could be that you aren't getting a strong signal. Hope it clears up soon!

ReplyDeleteWhat a delicious looking meal! I've made chicken piccata many times but, like Pat, never added the cream at the end. Will do so next time, as its DH's favorite way to enjoy chicken.

ReplyDeleteHi Kathleen, your beaches are beautiful. We stopped going to the Outer Banks (NC) when the kids got bigger because of the strong rip tides there, and switched to the bay side of Cape Cod. I always like bay sides because of the sand flats when the tide goes out. Your chicken piccata recipe looks so easy and delicious! I'm doing a lemon chicken with basil for On the Menu Monday.
