Here are a few desserts that lend themselves to the ♣ season.
If you have a few pears, a frozen puff pastry and some preserves you can make this easy dessert…
Pear O’Tart
Slice your pears and toss in some sugar and cinnamon.
Arrange in a tart pan, and brush with some preserves, I used mango..
Bake till the crust is golden brown. Serve with a dollop of fresh whipped cream or vanilla ice cream. You can put it together in minutes thanks to the magic of frozen puff pastry. :)
The next is an Apricot Cream Coffee Cake…
St. Patapricot Cake :)
Here is the recipe, from Land O Lakes Country Heritage.
Coffee Cake Ingredients:
1 3/4 cups all-purpose flour
3/4 cup LAND O LAKES® Butter, softened
1/2 cup sugar
2 LAND O LAKES™ All-Natural Farm-Fresh Eggs
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Filling Ingredients:
1/4 cup sugar
1 (8-ounce) package cream cheese, softened
1 LAND O LAKES™ All-Natural Farm-Fresh Egg
1 teaspoon freshly grated lemon peel
1 (12-ounce) jar apricot preserves
Glaze Ingredients:
1/3 cup powdered sugar
1 to 2 teaspoons lemon juice
Heat oven to 350°F. Grease and flour bottom and sides of 10-inch springform pan. Set aside.
Combine all coffee cake ingredients in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Spread batter on bottom and 2 inches up sides of prepared pan.
Combine all filling ingredients except apricot preserves in small bowl. Beat at medium speed, scraping bowl often, until well mixed. Spread evenly over batter in pan. Spoon preserves evenly over filling.
Bake for 45 to 55 minutes or until crust is golden brown. Cool 20 minutes. Loosen sides of cake from pan by running knife around inside of pan; remove sides of pan.
Meanwhile, stir together powdered sugar and enough lemon juice for desired drizzling consistency in small bowl. Drizzle over warm coffee cake. Serve warm or cold; store refrigerated.

ReplyDeleteGosh, do these BOTH look good! I will surely try the apricot one, as that's a fav of DH. I've made a pear tart before & it was pretty bland. I bet your glaze really adds some nice extra flavor besides making it look AWESOME!!!

More than anything I would love to join you for the St. Patrick's Day Blog Crawl, but I am going to be without computer access all week. I no longer have internet access in our getaway (where I'll be staying), and when I'm not cleaning there, I will probably still be cleaning in my sleep! LOL! Some blogging friends are coming to visit, and I am trying to get ready for them including redoing the yard... dead as a doornail.
Please know that my Irish eyes will be smiling at what I know will be a fabulous St. Patrick's Day party. I enjoyed myself last year, and I will catch up with you next if you will kindly give me a raincheck.

Kathleen, Your recipe names are so cute- they made me giggle! I love the pear o'tart! I have all the ingredients and will probably make it Saturday. Yummy! I am having some girlfriends over for breakfast on Wednesday and I think that would be delicious as a breakfast treat!

I love pears but I'm the only one who does...but that apricot cake with the cream cheese...who wouldn't love that...I have to try it...as for the cooking school...We are giving it another try...Only this is a classy joint...They have a dress code for lunch...and only 4 seatings from 11:30 to 12:15....They already warned Joyce about taking pictures...I think out pictures must be posted all over town...
