Sunday Favorites and As the Butter Melts...

A dreary, chilly Sunday here..makes you want to take a nap!

I am joining Chari at Happy to Design in Sunday Favorites..

One of my favorite things is a good hamburger! May means the weather will allow us to grill outside..Served with red leaf lettuce and tomato from a nearby farm, home made onion rings with some cheese melted on top...I am a happy camper!

I got my little slider press at LinensNThings...I miss that place..Armed with 20 % off coupons I could spend an hour deciding which new gadget I didn't need that I would buy..:)

But I have never spent a penny on a glass of wine, or alcoholic beverage so I justify my purchases that way.( I use that line with dh when he starts complaining about my dish collections..:) )We all have our vices, and I admit, I LOVE TO SHOP!

I put out plates of different toppings, and everyone can create their own mini burger...perfect size for the kids too..

If you can't find little rolls for the sliders, the biscuits that come 10 in a can in the refrig section of the market work well..just flatten them before baking..and I have used hot dog rolls cut in 3 in a pinch...

As the Butter Melts..

I love fresh corn...and it will be July before we have local corn here. The market had it for 20 cents an ear, and I took 2. They were pretty good..not like local, but worth 20 cents for a preview of summer!

We had it with filet mignon, and Hasselback potatoes, a small spinach salad, and that was last night's dinner...

Hasselback Potatoes

Here's the recipe.. www.what's cooking america.net

8 long baking potatoes
1/4 cup Parmesan cheese, grated
1/2 cup bread crumbs*
3 tablespoons olive oil, divided
1 teaspoon paprika
Coarse salt, to taste
2 teaspoons fresh parsley, minced

Preheat oven to 450° degrees F. Oil a large shallow glass baking dish.

Peel the potatoes. Place on a cutting board and cut a narrow slice from the bottom of each potato; discard the slice (this helps the potato lie flat and not roll). Place two long handled wooden chopsticks on each side of the potato lengthwise. Use a sharp knife and slice each potato crosswise, making 1/4-inch apart slices, cutting down vertically. The chopsticks will prevent the knife from cutting entirely through the potato. As you peel the potatoes, drop them into the cold water to prevent discoloring.

NOTE: Potatoes may be prepared in advanced to the above point. Place potatoes in cold water (to prevent discoloring) until ready to bake. To bake, dry potatoes well.

Place the Parmesan cheese, bread crumbs, 1 tablespoon olive oil, paprika, and salt in a food processor; process until blended. Brush potatoes with the remaining 2 tablespoons olive oil and pat the bread crumb mixture on top of each potato. Place potatoes in the oiled baking dish; cover with foil and bake 30 minutes. Remove the foil and bake an additional 15 minutes. Remove from the oven, sprinkle parsley on the tops and serve.

Makes 8 servings.

  8. Ohhhhh your making me so hungry. I am sitting here trying to decide what we need for dinner. I need your tiny burgers! Have you seen that Jack in the Box commercial..herding cows the size of schnauzers but their cattle! Great post :-)

  11. Last night's dinner looks fabulous. The filet is cooked perfectly. John has a "rule" about eating corn and potatoes at the same meal. He never eats two starches in one meal but doesn't think anything eating huge quantities of beef.

    I love sliders ... ate those for dinner tonight. Kathleen, your sliders always look tasty. I need to try feta on mine some time.

  14. I've got to quit coming to your blog late at night. It makes me soooo hungry to look at the photos of your beautiful food. My mouth starts watering, and then I have to get up and get something to eat (even though I did have dinner). Your tiny hamburgers look so great! I'm going to have to find one of those sliders.     Ohhh...you chose a great post to share once again...although it's new to me! Hehe! So sorry that I'm getting over to your place so late...or should I say early? It's 6am here at my place. Girl, all of your dishes just look scrumptious...hmmm, now I'm wanting a hamburger at 6 in the morning! Seriously!!! Hehe!!! Your recipe for Hasselback Potatoes sounds so good...I'd like to give it a try! We love potatoes at our house and this will be a great alternative to just a plain ol' baked potato!!! Thanks so much for sharing it with us!!!

  16. I love Hasselback potatoes too although I have always skewered mine before slicing them. Your way sounds much easier!

    Now you've gone & made me want one of those slider gadgets...I don't have room for more gadgets! ;o)

    I've enjoyed all of your recent tables but I think my favorite is the red & white one...it's lovely!

  18. Sorry I am late with my comment, but I really wanted to tell that I am just like Laurie and Chari. I read your blog at about two in the morning when I can't sleep, and then have to go to the kitchen and make myself "a little something" I clipped the Hassleback potato (and the stacked pear recipe) the first time, and am going to try it out on my company. You are probaly tiring of me telling you how you inspired me to get back in the kitchen, but it's true. You liked Maria Buatta too!

  20. I know better than to stroll into your blog on an empty stomach!
    One of my favorite treats is Ruby Tuesday's (restaurant) mini sliders.
    I like mine with a little melted Stilton.

    The lemon pound cake with glaze...amazing!
    Home baked pound cake is my Kryptonite!!! There isn't a pound I can refuse!

    The best pound cake I've every had in my whole life was a Dutch buttermilk cake our neighbor made when I was 6 years old. She always baked one when I'd was invited for dinner. How I'd love that recipe. I tried searching on line to no avail.
